I have already tried drying grapes, blackcurrants, yoshta, cherries and pitted hard-fleshed cherries in an electric oven. She worked out the following technology herself. On the

I scatter the berries on two baking sheets for baking dough and put them in the oven, heated to 55-bO ^ but no more. The oven door must be ajar to allow evaporating moisture to escape. In 2011, I developed a new technology for drying grapes - using an electric dryer for fruits and vegetables (photo 2, 3). It should be noted that ripe sweet berries with dense pulp are suitable for drying in this way. Of my varieties, these are: Galbena Nou, Zoloto Dona, New gift to Zaporozhye, Sunny, Pink peach, Bogotyanovsky (photo 4), Nakhodka (raisin variety), etc.

Varieties with juicy berries and thin skin are not suitable for drying. These are mainly early varieties: Laura, Delight, White Miracle (Delight + Original), Super Pleven. Of course, such grapes are best eaten fresh from the bush. In the second half of August and in September, later varieties also ripen: Kobzar, Monarkh, Transfiguration, Isabella, Tsytsa stable, etc., and in October - the Moldavian varieties Biruintsa and Moldova. The question arises: what to do with this abundance? I do not sell grapes, I treat friends and good acquaintances, I do the same with cuttings.

That's when the above-mentioned electric dryer completely solves the problem of drying grapes. The drying process is accelerated, it becomes more economical in terms of effort and time. And yes, it uses little electricity. Stages of work:

  • I cut the most ripe bunches, not necessarily large ones;
  • I wash them well in running water;
  • I separate the berries from the ridges and stalks, while the juice should not flow out;
  • I fill all five trays of the dryer with berries, in one layer and dry (photo 3).

The duration of drying depends on the variety of grapes, the degree of ripeness and sugar content of the berries. On average, drying lasts from 8 to 12 hours. I use the already mentioned “intermission” method: turn off the dryer for several hours or overnight to cool. And so I repeat in the process of drying 3-4 times.

I also want to talk about some of the drying features that I noticed when using this method. It is not always possible to spread berries of the same size or variety on one tray of the dryer, because there is an almost continuous conveyor.

Then, during the drying process, or rather the "intermission", you have to spend extra time sorting small and medium-sized berries. Small berries reach the desired condition faster, and then I selectively remove them from the tray and put them in a jar. You can pack the berries by size separately, but I don’t do this.

Yes, one more thing. I tried to dry large berries (Vogotyanovsky, Ataman - photo 4.1). But a lot of time is spent on this, which I consider inappropriate. The raisins from the Pink Peach variety turned out to be especially beautiful (photo 5).

If the grapes are sour, then after drying, I put them in glass jars, pouring sugar in layers. Such grapes are stored for a long time.

And if you pour boiling water over raisins in winter, then, believe me, this is a tasty and healthy delicacy.

I use multi-colored (white, yellow, red, blue) raisins all year round when baking buns, biscuits, decorating dishes; I love plov with raisins.
